The Terrace Restaurant is truly one of a kind. This Spring, we’re excited to be offering our ‘best of’ menu – a selection of the favourite Terrace dishes from years gone by – allowing us to showcase the ever changing feel of our menu.
Here is just a taster of what will be on offer when you visit.
‘Lasagne’ of Slow Cooked Oxtail with Celeriac Puree, Baby Spinach and Horseradish Cream.
This dish has been a firm favourite with regulars since it first appeared on the menu 8 years ago.
The beautiful Oxtail in this dish comes from Pondhead Farm in Lyndhurst, a New Forest Commoner’s holding owned and ran by Gerald and Patricia Mabbutt.
Commoning is a tradition which predates the declaration of the “Nova Foresta” as a Royal Hunting Reserve by the Crown in 1069; its roots having been founded by the early Celtic Agriculturalists who “turned out” domesticated Hogs and Oxon onto the forest wastes.
From Gerald & Patricia’s small holding, they strive to continue this practice; by farming this unique region they hope to ensure the ecology of the New Forest National Park is maintained in equilibrium.
Spiced Diver Caught Scottish Scallops with Cauliflower Puree, Apple Coriander and Cumin Velouté
Our scallops are from Scotland, simply because they are the best in the country. They are extra-large hand dived scallops, and are caught packed and shipped to us overnight – from sea to fork within 24 hours.
Just next to Exbury Gardens in the New Forest, you’ll find the fantastic John and Catriona who provide the most flavoursome salad garnish to this dish which perfectly balances the sweetness of the seafood with the rich Cumin Veloute.
Whoever said salad was bland clearly hasn’t tried John’s lettuce and cherry tomatoes!
Hampshire our larder and what a larder it is!
Our Head Chef Matthew Tomkinson is eager to make sure what goes on the plate is ethically and sustainably sourced. Although this isn’t too much of a problem, being located in Hampshire – due to the amazing local suppliers we have on our doorstep!
As Matthew states, “We’re so spoilt with amazing local produce in this county that I’ve made Hampshire my larder and what a larder it is!”
From 22nd February to 7th April 2016, we’re taking the time to completely renovate and revolutionise the kitchens at The Terrace Restaurant.
Matthew and his brigade are entering a new era and to celebrate this, Matt has created an exciting menu as mentioned, showcasing his favourite suppliers and featuring those signature dishes which have put The Terrace Restaurant on the culinary map.
